Vegan wholemeal banana/blueberry muffins


Well today is a lovely day and I decided what better to do than use up the bananas (that seem to be splitting)
So I thought what better than banana muffins!

Ingredients: 

1 cup of wholemeal flour
2-3 bananas
1 tsp of bicarbonate of soda
Sugar (you decide how much)
1 tsp of salt
1 tsp of oil
Method: 
Pre-heat the oven to 200 degrees/ 400 F

1. Mash the bananas and oil in a bowl until smooth (or a bit lumpier if you like to keep things rough and ready) 
2. Mix in the sugar/salt/bicarbonate of soda and wholemeal flour
3. Mix until a nice thick mixture is formed
4. Place into muffin cases
5. Place into the oven for about 20-25 minutes (or until they turn brown) 
6. Place on a rack to cool 
7. Most importantly- Eat and enjoy!

How simple and easy is that? 
and they taste delicious with a nice cup of tea ! and of course, guilt-free at around 149 calories each with practically no saturated fat.
