Vegetarian Recipe- Sweet potato topped Shepherd's pie

This is a brand new recipe I thought up the other day and surprisingly it worked fantastically!

I will take you step-by-step through the stages, you have to remember I am still experimenting with this and if you want to make changes or add things please feel free, I know I will change it around when I make it again!

This recipe was designed for one person, however it made enough for three!
Including leftovers for the next day.

Ingredients 

Topping: 
  • 3 Sweet potatoes
Filling:
  • 1/4 of a pack of Quorn mince (Or any soya mince) 
  • 2 large onions
  • Green beans
  • Chardonnay carrots
  • Courgette
  • Aubergine
  • Spinach
  • Sweetcorn 
  • Half a vegetable stock cube
  • Sprinkle of gravy granules (tps) 
  • Lea and Perrins (tps) 
  • Black pepper
With the vegetables you can estimate the amounts, but I personally like a lot ! 

Sides: 
  • Asparagus 
  • Salt
  • Black pepper

Method

Step 1:  The topping
Peeled sweet potato

Chopped in a pan of water


For the topping I peeled and chopped my sweet potato, into cubes or anything fairly small so they will boil and soften quicker. Once chopped I added it to a pan of cold water and placed the lid on for boiling later. 

Step 2:  The filling 
I peeled and sliced the onions into fine strips, but you can dice if you prefer. Then I chopped up the vegetables mainly diced so it would all fit into the oven-proof dish.

Once all the veg is chopped/diced, take the 1/4 of quorn mince and place it in a pan. Boil the kettle and pour about 100ml of water over the veg/quorn mixture, then add your seasoning, mine was a tsp of lea and perrins/Half a vegetable stock cube, a tsp of gravy granules and a generous amount of black pepper. These are just my preferences, you can try what you like, why not spice it up a bit? 

Step 3:  Hob
Put the hob on at a medium temperature and start to boil the sweet potato, at the same time put the Quorn mixture on the hob to cook. The sweet potato will only take about 15 minutes to soften and the Quorn about the same time depending on the preference of vegetable soft/hardness.

Step 4:  Mash
Once the sweet potato is ready- this is tested by trying to slice/stick a knife into the potato and if it slices with ease it's now ready to mash!

Step 5: Oven preparation
Then once everything is ready and mashed, start to place it into an oven proof dish, first layer being the quorn/vegetable mix;

Step 6: Sides
 Place the asparagus on a baking tray covered with tinfoil and sprinkle with salt + black pepper (or anything you like really!)


Step 7: Oven 
Place everything in the oven (200c) for about 15-20 minutes at depending on preference. 


and then TAH DAH! You're very own healthy shepherd's pie !
Serve with you're asparagus and you're sorted, Yum Yum.
