Oat/Spelt Cookies

I have been craving cookies a LOT lately (which isn't the healthiest thing hah) so I decided to look up some healthier alternatives!  

I happened to find one that was perfect for me (as I had all of the ingredients already) and I simply modified them each time I made them. 

The first batch was dark chocolate, the next sultanas, the next cinnamon, and well...you get the idea, you can do what you want with it!!

Ingredients: 



  • 1 cup of quick oats
  • 3/4 cup wholemeal spelt flour
  • 1 and 1/2 teaspoons baking powder
  • 1 and 1/2 teaspoons cinnamon
  • 1/2 teaspoon of salt
  • 2 tbsp of butter (melted)
  • 1 tsp of vanilla
  • 1 large egg
  • 1/2 cup honey or Agave 
  • 1/2 cup of dark chocolate chips/sultanas/nuts (whichever you choose) 


Method:

  1. Preheat oven to 180 Celcius / 325 degrees
  2. Line a baking tray with parchment paper or grease it with butter
  3. Mix the dry ingredients in a bowl (Flour, oats, baking powder, cinnamon, salt) 
  4. In a separate bowl mix the wet ingredients (Butter, vanilla, egg, honey)
  5. Once both are mixed separately add the wet ingredients to the dry ones
  6. Mix well 
  7. Roll into equal sized balls
  8. Put onto the tray and flatten them down 
  9. Put into the oven for 10 minutes
  10. Eat and enjoy!
